Help me raise $$$, get baked goods!!!

Howdy Y’all!

So some of you may know this, but me and one of my good friends, Marissa, are training together for a MARATHON with Team in Training, and raising money for the Leukemia and Lymphoma Society!!! Training has been going GREAT, but I really need YOUR help to raise the funds! My fund raising goal is $3200.00, and I would REALLY appreciate any donation you can give! Your donation is tax deductible, and it will go 100% towards Leukemia and Lymphoma research, as well as patient assistance programs funded by the Leukemia and Lymphoma Society!

Bake Fest 2011

Howdy y’all!

 

Ok, so this weekend, some of my AMAZING friends are coming to Houston this weekend to celebrate 3 of our birthdays, and I am SO excited about it that I felt the need to make them fat bake them some yummy treats! Afterall, this is a TRIPLE BIRTHDAY weekend, and should, therefore, be celebrated appropriately: with triple the sweets! o because of the madness that was my kitchen yesterday, I decided the name the night (appropriately, I think) BAKE FEST 2011. For those of you who are friends wih me on facebook, you might have already seen this picture. For those who are not, prepare yourselves, it’s a bit much…

 

Ingredients for BAKE FEST 2011

 

This is ALMOST all of the ingredients used (eggs & cinnamon not pictured), and some not in their full quantities… yikers. So needless to say, my kitchen was a CRAZY place to be yesterday evening! And also a very sweet place… quite literally. By the end of this process, at about midnight, I was so high on sugar that I probably could have (and should have) run 10 miles. I didn’t, because I am a working woman, and I prefer not to sleep on the job, but hey, I know it was possible!
 
Throughout this crazy night, I made 3 new recipes, 4 old favorites, and COVERED my kitchen in sugar and chocolate. This is what I  consider a SUCCESS!
 
So be on the lookout for new recipes, just most likely not until Sunday, because I will be partying it up with my girls this weekend! I would post some pictures of the process/finished goods, but again, I had to go to bed last night, and didn’t have time to put them on my computer! But I promise there are LOTS of pictures to come along with the recipes!

Vanilla Cupcakes: Picture Gallery!

HOWDY!!!

Sorry for all the caps guys, but I just can’t help it, I’m SO EXCITED!!!! For real, my heart is racing, I’m sweating a little, and pacing around like a small child who can’t hold still because… I FINALLY GOT A STAND MIXER!!!!!!!!!!!!!!!!!!!

For those of you who don’t know, I have been DYING for a stand mixer for a reeeeeeeally long time, and my wishes have finally come true! Yesterday was my birthday, and my loving parents obliged my wishes and gave me money for a stand mixer. As they know how picky I am, they thought money would be better, so I could go pick out the exact one I wanted… good call parents. So I went shopping today, pacing the isles of Bed Bath & Beyond, Walmart, Target, and Kohls, looking for the perfect deal on the perfect mixer! And I found it at Kohls… such a great deal, and such a perfect, beautiful stand mixer!!! So here she is ladies and gents…

STELLA THE STAND MIXER!!! (Yes, I named her… I name everything. And she is a VERY important member of the family, thus, she is named. I know it’s nerdy, but it’s me… can’t help it.)

Stella is a 5 quart KitchenAid Artisan Series Stand Mixer in Empire Red. In other words, she is perfect. I CAN’T WAIT to start cranking out recipes in this amazing girl! Be on the look out soon, and by soon I mean tomorrow morning. I have a VERY strong sense of urgency, and I will be putting her to use ASAP!

Best dinner… ever!

Howdy from Florida peeps!

So for those of you who didn’t know, I am currently in sunny FLORIDA (or rainy right now, wahhh) for a couple days! I’m helping my grandparents move and getting a bunch of really nice furniture in return! But sadly, this means no baking until I’m back on Friday. I know, I’m crying a little on the inside! Especially since I have so many things I’ve been dying to try!

But tonight when we got in, we came back to my grandparents house of 20 years… I’ve had some amazing memories in this place! We had some champagne, and then quickly went off to dinner at this bistro they love to celebrate mine and my grandmas birthdays (mine is the 5th, hers the 18th… I might be biased, but august is the best month)!!!

Now obviously I really appreciate baked delights, but I also really appreciate a well cooked meal, and let me tell you… This was THE BEST meal I have had in a really long time! So I’ll stop babbling and show you…

Apple Brandy Glazed Pork Chop with Sweet Potato, Asparagus & Brandy Soaked Apple!

OMG. Yummers. I’m still full and we ate 3 hours ago! Maybe because I couldn’t stop eating… Oopsies 🙂 but seriously, the sauce was absolutely amazing, and the pork was cooked PERFECTLY!!! i LOVE sweet potatoes and asparagus, so this was just amazing! Definitely a great meal after a long day of traveling (and less than average airport food.) They also had fantastic ciabatta bread (freshly baked… I might have eaten it all before I remembered to take a picture, sorry) served with two butters– red wine, and garlic chive… Yes, you read right. I was in foodie HEAVEN!

Now I do realize that this doesn’t have to do with baking OR being healthy, but since I’m gone until Friday, I figured I would keep y’all updated! And hopefully we’ll find some yummy desserts here in Florida! I’ll be sure to share if I find some good ones!

Red Velvet Cupcakes with Cream Cheese Frosting

Howdy yall!

So I know I was taking a temporary break since I baked so much last week, but I couldn’t stay out of the kitchen for too long… what can I say, it’s my weakness and I can’t help myself! And besides, I am a firm believer in doing what you love, so bake I shall! I also know I said my next recipe would have chocolate and hazelnut, but this was a special request 🙂

One my best friends in the world, Marina (check out her blog, it’s so fantastic), threw a Gender Reveal party for our friend, Jessica, who is having a baby girl! Let me just tell you– Marina is the BEST party hostess there ever was, so I felt pretty honored to be able to help! And since Jessica’s favorite cupcakes are red velvet, I jumped at the chance to make them for the party! The great thing about this recipe is how SIMPLE it is… really! This is quite possibly the easiest recipe I have posted so far, and they are YUMMY! So let’s get to it:

Cupcakes:

You’ll need…

Red Velvet Cupcake Ingredients **Salt not pictured, oopsies!

You’ll need to…

Preheat the oven to 350 degrees F. Line a 12-cup cupcake pan and set it aside for later. In a medium bowl, sift together all of the dry ingredients.

In a large bowl, beat together the oil, buttermilk, eggs, vinegar, and vanilla with a mixer until they are well blended. Then add the food coloring and the dry ingredients to the wet mixture and mix until well combined.

Scoop the batter into each cup, filling them about 2/3 full.

I was a little messy 🙂

Bake for about 20 minutes, or until a toothpick comes out clean. Cool for 10 minutes in the pan, then move to a wire rack to cool completely.

Frosting:

You’ll need…

Cream Cheese Frosting Ingredients

You’ll need to…
Cream the butter and cream cheese until smooth. Add the vanilla and mix until well blended.
Add powdered sugar slowly until you reach the consistency you like. (I always add a half cup at a time, until I reach the perfect taste and consistency… you can always add more, but you can’t take any out so slow is best!)
Frost your cupcakes once they are COMPLETELY cooled!
YUMMERS!!!! Seriously… they are tasty!

Ok guys, don’t you agree, easiest recipe I’ve posted?! I think so 🙂 And they are so tasty… people will think they were a lot harder to make because they are too yummy, and you can go ahead and let them! They definitely satisfied my sweet tooth for the day, and I got great reviews from everyone at the party too! I doubled the recipe because we needed 24 for the party (which means the actual recipe makes 24) so if the pictures look like there’s a lot more than you have when you make them, don’t worry! I made twice as much as you’ll be making! But seriously guys, MAKE THEM! They’re great 🙂

Not a recipe… WEIRD!

HOWDY!

So as strange as this might seem, this is my first post that is NOT a recipe. Eek. It feels weird to me too! But I have taken a few days off of baking to finish all of the goodies I made last week (I realize I went a little crazy and made a ton of stuff) AND to exercise some of that baking off… my body is yelling at my for all that sugar!

But because I really wanted that this blog to be not only about baking, but about living healthy too, I thought I’d share some things that I have found helpful to my running and overall health this week!

1. Music is ESSENTIAL to working out…

 

At least it is for me… I LOVE IT!!! Running is the same escape that baking is for me… it is such an amazing time to really check out and not worry about anything, and music really makes it an even more amazing escape! Thanks to fellow blogger Brandon, and a concert I went to on Monday at the House of Blues, I have had some fun new music to run to… my two new favorite songs at the moment are…

                                                      2. Hey Mama- by Mat Kearney

 

If you are needing any inspiration to get moving, I swear these songs are so light and fun, you will have no problem getting up and going! Saviour is electronicky (not a word, I know) and light, it kind of makes you feel like you’re floating! And Hey Mama is SUPER cheerful and fun… I might dance around my room like a 5 year old when I hear it 🙂 They are both great songs… I suggest adding them to your workout playlist immediately.

 

2. Working out is SO much easier with friends…

 

While I prefer individual sports, like running and swimming, it is a whole lot easier to get motivated when you are going with friends! You know that you have to go because you don’t want to let your friend down, and you also have someone there to push you when it gets tough! And in this heat (Texas needs to cool down STAT), running outside can get extremely tough! Plus, you have someone to get dinner/drinks/dessert with afterwards!

  

3. Rewards are also essential…

 

Whether it’s having a yummy dessert, getting a fancy new pair of shoes, treating yourself to some cool new workout clothes, or buying a new movie that you’ve been dying to get, you should definitely reward yourself for your hard work! Obviously, I love to reward myself with baking new treats, but it doesn’t have to be that for you! If you’ve worked out really well for the past 2 weeks and you’ve been DYING for that pretty dress at Anthropolgie, or that cool new video game at Best Buy (trying to relate to the men haha), DO IT! You deserve it for your hard work 🙂

 

Well, those are my thoughts for the day! I hope if you needed some motivation to get up and get active, this helped! You might want to start the works outs ASAP too, because I have some YUMMY new recipes in the works, and I think you’ll want to make them (at least I hope so)!!!
