White Chocolate Blondies (with chocolate & peanut butter chips!)

***I posted this recipe a few weeks ago, but for some reason, wordpress deleted it… rude. But don’t worry, it’s baaaack!***

So once a week, some of my girls friends from college and I have a girls night, and a few weeks ago, we went to Painting With a Twist… you bring your own snacks/wine and learn how to paint a masterpiece (or in my case, lack there of). It is a ton of fun, but you HAVE to bring some snacks to munch of while you’re painting to stimulate the creative process 🙂 So I thought, what better way to treat everyone than to bake something delicious!

And so here we are, with White Chocolate Blondies! But not just your average blondies… these have peanut butter AND chocolate chips! So bad, but oh so good!

You’ll need…

***I have white chocolate chips pictured, but I did NOT use them... I used white chocolate for baking. It works MUCH better!

White Chocolate Blondie Ingredients

You’ll need to…

Pre-heat your oven to 350° F. Grease a square baking dish (8×8 or 9×9, depending on how thick you like your blondies… I use an 8×8). Melt white chocolate and butter in a double boiler, over barely simmering water. Stir constantly, until smooth. Once smooth, remove from heat and let cool. **Make sure you CONTINUOUSLY stir the white chocolate while you are melting it– if you don’t, it can burn on the bottom and not melt properly, and you don’t want that!

In a large bowl, beat eggs with an electric mixer until they are foamy.

With the mixer still running, gradually add in the sugar and vanilla. Next, slowly pour in the white chocolate mixture.

In a small bowl, combine the flour and salt; fold into the white chocolate mixture using a rubber spatula or wooden spoon until well combined. Fold in the chocolate chips.

Pour batter into the greased baking dish, and spread evenly.

Pop in the oven and bake for 25-30 minutes (insert a toothpick or knife in the middle and make sure it comes out clean before removing from the oven). Cool on a wire rack before cutting!

I clearly couldn’t wait to take a bite… wahhhh. Yummers!

Oh gosh… just yum. It’s really all I can say! These are so good… I know I love them, they went over well at girls night, and my family was VERY excited to have the leftovers at the house! So the general consensus– MAKE THESE!!! I promise, you won’t be disappointed!
